Fattoush is a salad made using vegetables and fried khaboos (pita bread). The dressing used for preparing fattoush is very unique and it is the dressing that makes the fattoush very different from any other salad.


Here is the recipe..

Serves 2

Cucumber - 2
Tomato - 1
Red Pepper - 1/2
Yellow Pepper - 1/2
Lettuce - 4 leaves
Khaboos (Pita bread) - 2
Pomegranate Molasses - 2 Tablespoons
Apple Cider Vinegar - 2 Tablespoons
Lemon Juice of 1/2 lemon
Olive oil - 1 Tablespoon
Sumac - 1/2 Teaspoon
Dried Mint - 1/2 Teaspoon
Paprika - 1/2 Teaspoon
Salt to taste
Garlic - 1/2 clove minced (Optional)

Method :
1. Cut or tear the khaboos into bite sized pieces and either deep fry or shallow fry or toast them till they turn brown and crisp. I deep fry them. Let them cool down.
2. In a small bowl add pomegranate molasses, vinegar, lemon juice, olive oil, sumac, dried mint, paprika, salt and garlic and mix well to combine. Keep this dressing aside.
3. In a mixing bowl cut all the vegetables being used into small bite sized pieces.
4. When ready to serve, pour the required amount of dressing over the vegetables and mix well to combine. Do not add the dressing before serving as the vegetables will turn very soggy.
5. Add the fried khaboos on top and serve.
