Börek is a baked filled pastry prepared using a special thin flaky dough called Yufka. Börek is of Turkish origin. Börek is filled with cheese, minced meat or vegetables especially Spinach. Phyllo (Filo) pastry dough can be used as a substitute to Yufka dough.


Here is the recipe..

Ingredients :

Phyllo (Filo) pastry sheets - 1 package
Feta Cheese - 1 box, low fat
Coriander Leaves - 1 Tablespoon finely chopped
Egg - 1
Butter - 5 Tablespoons, Melted
Milk - 1/3 cup
Olive Oil - 1/4 cup

Method :
1. An hour before planning to prepare the Börek, Place the phyllo pastry sheets in the refrigerator to thaw.
2. Place the feta cheese block in the freezer to firm it up. Then crumble it in a bowl. Add chopped coriander leaves and mix well to combine. Return to the refrigerator or freezer.
3. In another bowl add egg, melted butter, milk, olive oil and mix well to combine. Keep it aside. This is the glaze.


4. Take a 9X13 Pyrex baking dish and brush it all over the bottom and sides with the prepared egg glaze.
5. Remove the phyllo sheets from the refrigerator and unfold the sheets.
6. Keep a damp cloth ready to cover the phyllo sheets that are unused as it tends to dry up very quickly.


7. Use one phyllo sheet at a time. Tear the phyllo sheet midway into two and it will fit in the pyrex dish.
8. Place one sheet of phyllo in the baking dish.
9. Brush with the glaze.
10. Place another sheet of phyllo and brush again with the glaze. Repeat this for 8-10 phyllo sheets.
11. Sprinkle a generous layer of crumbled feta cheese and place a sheet of phyllo on top of it. Press it firmly but gently. Brush with the glaze. The cheese may turn into a paste. It is ok. Just make usre you spread it completely.


12. Either make a thick layer of Feta cheese and place another 8-10 sheets of phyllo making sure you brush with the glaze after every layer (or) Add 2 -3 layers of feta cheese. I added 3 layers of feta cheese.
13. After the first layer of feta cheese, place 2 layers of phyllo sheet making sure you brush with glaze after placing each layer of phyllo sheet.
14. Repeat this two more times. After the 3rd layer of Feta cheese, place 5 sheets of phyllo.
15. This is what you would have made, 10 X Phyllo with Glaze -> Feta cheese ->  2 X Phyllo with Glaze -> Feta cheese -> 2 X Phyllo with Glaze -> Feta cheese -> 5 X Phyllo with Glaze
16. Generouly brush the topmost phyllo sheet with glaze.
17. Preheat oven to 180C
18. Bake for 35 - 40 minutes or till the top layer turns brown.
19. Allow it cool down completely once out of the oven.
20. The entire pastry will shrink from the sides.
21. Using a sharp knife or a pizza cutter cut into squares or triangles.
