This Green salad is a very healthy, tasty and easy to prepare recipe. It is very addictive and I now prepare it almost every other day for dinner. I even eat it for lunch when I am not too sure what to cook. It is very filling too.

I adapted this salad recipe from the salad recipe given to me by one of my good friend (A) who is a great cook. This salad recipe is a keeper.

Here is the recipe..

Serves 2 as a part of a meal or 1 as an entire meal

Cucumber - 2
Green Apple - 1/2
Iceberg Lettuce - 1/4th of small lettuce
Capsicum - 1/4
Sliced Spanish Green Olives - 1 Tablespoon
Light mayonnaise - 1 Tablespoon
Feta Cheese - 6 Teaspoons
Salt and Pepper to taste (Optional)
Lemon Juice - 1 Teaspoon (Optional)

Method :
1. Wash, peel and cut the cucumber into semicircle discs.
2. Wash, peel and cut the green apple into discs.
3. Tear the lettuce and wash it.
4. Wash and cut the capsicum into small pieces.
5. In a mixing bowl add cucumber, apple, capsicum and lettuce.
6. Add Mayonnaise and mix well to combine.
7. Refrigerate till ready to serve.
8. Just before serving, add the sliced Spanish olives. I also add the liquid in which the olive slices are preserved. This is a great substitute to adding salt and lemon juice. Mix well to combine.
9. Add salt, pepper and lemon juice if using and mix well.
9. Cut the feta cheese into cubes. I just scoop it out using a teaspoon.
10. Add 2 teaspoons of feta cheese and mix well.
11. Add the remaining feta cheese on top just before serving.
