Delicious oven roasted whole chicken
















Here is the recipe..

Whole chicken - 1 (I used 900 grams)
Ginger Garlic Paste - 2 Teaspoons
Lemon Juice - 3 Teaspoons
Hung Curd - 4 Tablespoons (Substitute with Yogurt)
Salt to Taste
Turmeric Powder - 1/2 Teaspoon
Red Chilli Powder - 2 Teaspoons or as per spice level
Coriander Powder - 1 Teaspoon
Garam Masala - 1/2 Teaspoon
Tandoori Masala - 1 Teaspoon
Cumin Powder - 1/2 Teaspoon (Optional)
Cooking Spray / Oil - as required
Butter as required (Optional)

Method :
1. Clean the chicken inside out really well and wash it. Discard or keep the skin. I discarded it.
2. Place the washed chicken in a sitting position on a colander to get rid of all the water for about 15 minutes.
3. Make several deep slits all over the chicken especially on the thick flesh. Make sure not to make big slits as it may make the chicken fall apart.
4. Mix all the ingredients except the oil and butter and apply it all over the chicken. You may even apply the salt and ginger garlic paste first and then apply the rest of the ingredients.
5. Refrigerate the chicken for several hours, minimum of 6 and a maximum of upto 2 days. Do not place it in the freezer.
6. Place the chicken outside the refrigerator 30 minutes - 1 hour before you plan to cook it.
7. Preheat oven to 200C.
8. Cover a roasting pan or a baking dish with aluminium foil.
9. Tie both the legs of the chicken with a twine or thick thread. This ensures the chicken not to lose shape.
10. Spray or brush or apply oil all over the chicken.
11. Place it breast side down on the baking tray and roast for 30 minutes.
12. After 30 minutes turn the chicken to the other side ie breast side up and roast for another 30 minutes. You can apply oil or melted butter all over the chicken at this stage.
13. Turn the chicken around again and roast for a further 10 - 15 minutes till chicken is cooked and well roasted as desired.
14. Roasting after 30 + 30 minutes to a further upto 30 minutes is completely optional. I roasted it for a total of 30 + 30 + 10 + 10 turning the chicken over after every interval.
15. Remove from oven and when ready to serve cut the twine or thread the cut the chicken with a sharp knife.

    Lol giving baby a bath I too feel that when I pick up the chicken putting my hands under the wings...weird feeling right !!

  10. Lovley dish, yes, I am also addicted to make whole chicken dish, but, my hubby scared me saying that whole chicken may weigh around 2-3 kg. Contrastingly, you have used almost 1 kg whole chicken, giving me thoughts to make them again :) am your new follower :)
