Bhindi / Okra / Lady's Finger is our most favorite vegetable. I prepare it every week at least once as a curry or as a side dish or as a snack. I found some very fresh and tender okra and I prepared this crispy fried okra for lunch today with Drumstick Daal.


It was so tasty and remained crisp for almost an hour after I made it. I am not too sure for how much more longer it may have remained crisp as we finished it all.


This is a keeper recipe and a must try for all Okra lovers. I plan to make this with brinjal and Ivy gourd too.


Here is the recipe..

Serves 2 as a side dish or a starter / appetizer

Ingredients :
Bhindi / Okra / Lady's finger - 250 grams
Besan / Gram Flour - 1 Tablespoon
Red Chilli Powder - 1/2 Teaspoon or as per spice level
Salt as per taste
Cumin Powder - 1/4 Teaspoon
Dry Mango Powder - 1/4 Teaspoon
Chat Masala - 1/4 Teaspoon
Oil for Deep frying

Method :
1. Wash the okra and pat dry them with a paper towel.
2. Cut the top and tip of the okra.
3. Cut each okra vertically into half and then either cut each half vertically into half or into 3 pieces, thereby cutting each okra vertically into 4 or 6 pieces in total.
4. Take all the okra in a mixing bowl.
5. Add salt, cumin powder, dry mango powder, red chilli powder, chat masala, gram flour and mix well to coat all the okra pieces with the spices.
6. Heat oil for deep frying.
7. Drop the okra into hot oil and fry them in batches without overcrowding.
8. Fry on high or medium high flame as the okra may turn soggy and may absorb oil if fried on low or medium low flame. However take care not to burn them.
9. Fry till the okra turn crisp and brown.
10. Transfer to a plate lined with absorbent paper towel. Fry the remaining okra.
