We love hard boiled shallow fried eggs and I make them whenever I am not too sure what to prepare as a side dish with steamed rice and curry. It is so easy to prepare and tastes great too.


If you like eggs then there is no reason you will not like this simple preparation. You can spice it up with ingredients of choice and I normally make it with basic spices.


Here is the recipe..

Makes 8 pieces

Ingredients :
Eggs - 4
Water as required
Salt as needed
Oil as needed
Red Chilli Powder as per spice level
Turmeric Powder a pinch

Method :
1. In a saucepan add the eggs and fill cold water till the eggs are completely immersed.
2. Add a little salt and a teaspoon of oil and bring this to a boil and continue to boil for 10 minutes.
3. After 10 minutes of brisk boiling discard the hot water and add cold water. Leave the eggs aside for sometime.
4. When the eggs have cooled down, peal them to get the most perfect hard boiled eggs.
5. Cut each egg vertically into half.
6. In a small mixing bowl combine salt, red chilli powder and turmeric powder. You can add any other spice of choice.
7. Arrange the eggs on a plate with the yolk side facing up.
8. Sprinkle the prepared spice mix on top of the egg.
9. In a pan heat very little oil. With the flame on low, place the eggs with the yolk and spice side facing down ie on the oil.
10. Sprinkle the remaining spice mix on top of the eggs.
11. Cover and cook it on medium low flame. The eggs may splatter so it is important to cover them to avoid accidents.
12. After a few minutes remove the pan aside and protecting yourself with the lid (not funny, as I have had a bad oil splatter) turn one of the eggs to see if it cooked. If it is then turn over all the eggs to cook on the other side. If uncooked then cover and put it back on flame to cook for another minute.
13. Cover again and cook for a few minutes till the other side is cooked too.
14. When cooked on both sides, turn off flame and remove the eggs to a plate. If you leave them in the pan then the eggs may turn a bit soggy.

  11. I still remember this back at home, my mother used to make these. Only difference is she used to temper with rai,curry leaves. The spiced boiled eggs looks awesome :)
