This is one of those recipes that caught my instant attention. First the name and then the picture. I had shrimps at home so I gave it a try and I liked it. The next time I make them I will however spice it up a bit more.


I loved the sauce / dip a lot more than the shrimps itself and I will be making the dip more often than the shrimps.


The recipe called for Panko breadcrumbs which I did not have at home but i did have some sandwich bread at home so I made panko breadcrumbs at home to prepare these baked bang bang shrimps.


Here is the recipe..

Ingredients :
Fresh shrimps - 20 Deveined.
Buttermilk - 1/4 cup + 2 Tablespoons
All Purpose Flour - 1/8 cup
Corn Flour - 1/8 cup
Garlic Powder - 1/4 Tablespoon
Egg White - 1/2
Paprika - 1/2 Teaspoon (I used cayenne pepper)
Hot sauce - 1/4 Tablespoon
Salt to taste
Pepper powder to taste
Panko Breadcrumbs as required (See notes how to prepare at home)

Sauce / Dip :
Mayonnaise - 1/4 cup
Sweet Chilli Sauce - 2 Tablespoons
Hot Sauce - 1/4 Tablespoon
Honey - 1 Tablespoon

Method :
1. Wash and clean the prawns and keep aside.
2. Preheat oven to 200 C
3. In a mixing bowl add flour, corn flour, garlic powder, cayenne perpper, salt, pepper powder and mix well.
4. Add hot sauce, buttermilk and 1/2 of an egg's white and mix well to get a smooth batter.
5. Add the cleaned shrimps to the bowl and coat well with the batter.
6. Line a baking tray with parchment paper.
7. In another mixing bowl take panko breadcrumbs.
8. Coat the shrimps one by one with the panko breadcrumbs and place them on the baking tray.
9. Bake for 10 minutes and then flip them over and bake for 5-10 minutes till the shrimps turn golden.
10. To prepare sauce / dip, Mix the mayonnaise, hot sauce, sweet chilli sauce and honey and mix well to combine. Refrigerate till ready to serve.




Enjoy Baked Bang Bang Shrimps.

Notes :
1. To prepare panko breadcrumbs at home, use 1 day stale bread and remove the brown outer crust. I used white sandwich bread. Cut the bread into small pieces and pulse in a blender to get coarse breadcrumbs. Preheat oven to 145 C. Place the bread crumbs on a baking tray and bake for 3 minutes. Toss the crumbs and bake for further 2-3 minutes. Make sure they do not brown. Cool the breadcrumbs for at least 1 hour as they should be completey dry. Store for several weeks at room temperature in an air tight container.
