My mother used to prepare recipes using Soya chunks very often. I somehow have not prepared or purchased soya chunks for several years. I saw them recently in the supermarket while shopping and got home a big packet.

My husband says that even he used to eat a lot of soya chunks prepared by my mother in law. But for some reason he never ever mentioned his desire to eat soya chunks.

I prepared soya chunks pulao and we loved it. It tastes great and makes the pulao even more fulfilling.

Here is the recipe..

Serves 3-4

Ingredients :
Basmati Rice - 2 cups
Soya chunks - 50 (use more or less)
Onion - 1 large finely sliced
Tomato - 2 medium finely sliced
Yogurt - 4 Tablespoons
Green chilli - 2
Ginger Garlic Paste - 1 Teaspoon
Salt as per taste
Red Chilli Powder - 1 Teaspoon or as per spice level
Turmeric Powder - 1/4 Teaspoon
Coriander Powder - 1/2 Teaspoon
Cloves - 3
Cardamom - 2
Cinamom - 1 inch stick
Coriander leaves - 2 Tablespoons chopped
Oil - 3 Tablespoons
Water as required

Method :
1. Boil water and add soya chunks to boiling water. Once they double in size, strain and keep them aside.
2. Wash the rice and keep it aside.
3. In a cooking vessel heat oil.
4. Add cloves, cardamom and cinamon and fry for a minute.
5. Add the finely sliced onion and green chillies and fry till onion turns translucent.
6. Add coriander leaves and mix well.
7. Squeeze water from the soya chunks gently and add it to the onions and fry for a minute.
8. Add ginger garlic paste and fry for a minute.
9. Add salt, turmeric powder, chilli powder, coriander powder and fry for a minute.
10. Add the sliced tomatoes and fry for 5 minutes.
11. Add yogurt and mix well.
12. Continue to cook till oil starts to separate and the masala reduces and is just sticking to the soya chunks.
13. At this stage you can cook further as desired. I cooked in the rice cooker. You can cook in pressure cooker or in the cooking vessel or prepare rice separately and mix to the masala.
14. Here is how I made. Add the basmati rice without any water and mix well. Cook for 2 minutes.
15. Transfer the contents to a rice cooker. Add water and salt if needed. I always add 2 cups water to every 1 cup of basmati rice. Add a little less water as there is masala.
16. Cook in the rice cooker.

Enjoy Soya Chunks Pulao.
