I saw this recipe on my facebook wall and I was instantly attracted to the name and then the picture. I wanted to give it a try soon after I browsed through the ingredients. I made them and I loved how they turned out.

We ate them hot out of the oven and then ate the leftovers the next day by warming them up in the microwave. I would be making these again and again and again. I would also pass this on and recommend it to every single person I know.

Wow. What great taste and what excellent flavors. Simply superb. I am so glad I tried this recipe. I am not too sure why they are called biscuits as I feel they are more of a bun or a roll. They have a nice crunch when you take a bite but then are soft and fluffy. Well it hardly matters if they are biscuits or buns or rolls, I love them.

Here is the recipe..

Makes 6 cheddar bay biscuits

Ingredients :
All Purpose Flour - 1 cup
Cheddar Cheese - 1/2 cup grated
Butter - 1/4 cup (60 grams) Unsalted
Buttermilk - 1/2 cup, cold
Sugar - 1/2 Teaspoon
Baking Powder - 1 Teaspoon
Baking Soda - 1/4 Teaspoon
Salt - 1/3 Teaspoon
Pepper Powder - 1/4 Teaspoon
Cayenne Pepper - 1/8 Teaspoon

Topping :
Butter - 1 Tablespoon, unsalted and melted
Garlic Powder - 1/4 Teaspoon
Parsley - 1/2 Teaspoon finely chopped (I used corriander leaves)

Method :
1. Preheat oven to 235C.
2. Place parchment paper on a baking tray or sheet. You may greese the baking tray if not using parchment paper.
3. In a large mixing bowl add flour, baking powder, baking soda, salt, sugar, garlic powder, cayenne pepper and mix well to combine.
4. Add the grated cheddar cheese and mix to combine. Keep it aside.
5. In another mixing bowl add cold buttermilk and to it add melted butter. Mix it till the butter forms small clumps.
6. Add the butter and buttermilk mix to the flour mixture and mix with a rubber spatula till it forms a dough and no dry ingredients remain.
7. Grease a 1/4 measuring cup and scoop the dough and place it on to the parchment paper. You can use spoons or even drop shaped balls with your hand.
8. Leave space between each dough portions.
9. Bake in the preheated oven for 10-12 minutes or till they turn golden brown.
10. As the biscuits are baking in a small mixing bowl add melted butter, garlic powder and the chopped parsley and mix well to prepare the topping.
11. Remove the biscuits from the oven and brush all over with the topping.
12. Let them cool down slightly and serve warm.

Enjoy Cheddar Bay Biscuits.

Notes :
1. These biscuits can be stored at room temperature for upto 3 days.
2. Warm them up in the microwave to serve.
