Baingan ka Bharta is a favorite in my house. Both I and my husband love it with hot chapattis. It is easy to prepare and tastes really good. I make this at least once in 15 days. I even enjoy the leftovers (if any) as a side dish with rice.

 
 

Here is the recipe..

Serves 2-3

Ingredients :
Eggplant / Aubergine / Brinjal - 1 large / 3 medium (Big size brinjal, see below picture)



Onion - 1 medium finely chopped
Tomato - 3 medium finely chopped
Ginger Garlic Paste - 1 Teaspoon
Red Chilli Powder - 1 Teaspoon or as per spice level
Salt to Taste
Turmeric Powder - 1/4 Teaspoon
Garam Masala -1/4 Teaspoon
Coriander Leaves - 1 Tablespoon Chopped
Cumin Seeds - 1/2 Teaspoon
Oil - 2 Tablespoons + as required

Method :
1. Wash the eggplant and wipe it with kitchen towel.
2. Apply some oil all over it and place it over stove on medium low flame. Keep turning the eggplant till it is well cooked on all sides. It will start to shrink and sink inside as it cooks.
3. Remove and keep it aside.
4. When it cools down, peel the skin, cut the stalk and wash just a bit under running tap water.
5. Cut it into tiny pieces or mash it slightly.
6. In a cooking vessel heat oil.
7. Add cumin seeds and when they turn brown add the chopped onions and fry till translucent.
8. Add ginger garlic paste and fry for a minute.
9. Add the chopped tomatoes and cook for 3-4 minutes.
10. Add turmeric powder, salt, garam masala, red chilli powder and mix well.
11. Cook till oil begings to separate.
12. Add the mashed or finely cut eggplant and mix well.
13. Cook for 5 minutes by continuously mixing.
14. Add coriander leaves.

      It is not spicy. It is the color from the tomatoes. :)
