This brings back so many childhood memories. My mom used to make this for me every mango season. I used to eat store bought (Nutrine Naturo) during off mango season. The sourness of raw mangoes is balanced with the sweetness of sugar and jaggery. I was very happy to make this and have this after several years. It is called Gudumba in Urdu.

Here is the recipe..

Ingredients :
Raw Mango - 1 large just beginning to ripe
Sugar - 5 Tablespoons or as per taste
Jaggery - 3 Tablespoons grated or as per taste
Salt small pinch

Method :
1. Peal, cut and wash the raw mango into chunks.
2. In a cooking vessel add the mango chunks with water just covering the chunks.

3. Let it cook till the chunks are cooked and soft and all the water evaporates.

4. Let it cool down completely and blend it to a smooth puree.

5. Transfer it back to the same cooking vessel, add sugar, grated jaggery and salt and cook on low flame stirring continuously.

6. it will begin to thicken and also splutter a bit. Be cautious.
7. Keep cooking till it turns very shiny and gum like.
8. Grease a tray with oil or ghee.
9. Spread this mango pulp and let it cool to room temperature. 

10. Refrigerate it for a few hours and cut into bars.
11. Keep refrigerated.
