This is a very filling and thick soup. I really like this soup as it is yummy and very delicious. It is a Jamaican recipe. It is really very simple and easily prepared.  The soup can be thinned down by adding chicken stock or vegetable stock or water.

Serves - 1

Here is the recipe..
Red pumpkin - 1 cup peeled and cut into cubes
Carrot - 1/2 cup peeled and cut into cubes
Onion - 1/4 chopped
Garlic - 1 clove minced
Butter - 1 tablespoon
Milk - 1 cup
All purpose flour - 1 tablespoon
Chicken stock / vegetable stock / water - 1 cup (optional to thin the soup)
Salt and pepper to taste

Method :
1. Wash the pumpkin and carrot cubes and add it to a saucepan with water just above the vegetables. 

2. Bring to a boil and allow it to simmer till all the water evaporates and the vegetables are tender.

3. Blend it to a smooth puree after it cools down.

4. In a saucepan melt butter.
5. Add the onions and garlic and saute till translucent.
6. Add the all purpose flour and stir well for a minute. 
7. Add milk 2 tablespoons at a time and stir well without lumps till all the milk is added.

8. Add the pureed vegetables. Mix well.

9. Add salt and pepper to taste and bring to a boil.
10. At this stage you can add the stock or water to thin down the soup and bring to another boil.

Enjoy pumpkin soup.
