I first tasted Pesto chicken when my husband ordered it in a new restaurant that had opened up in Dubai. He took the first bite and exclaimed how amazing it tasted. Unfortunately we moved out of UAE and really missed the Pesto chicken. Why fear when yescook is near?? LOL!! I found a recipe online for pesto sauce, marinated the chicken in it and roasted in the oven. The outcome was  very close in taste to the one we ate at the restaurant. If you like the taste and flavor of pesto then you should try making pesto sauce at home and also try this easy pesto chicken recipe..



Here is the recipe.


Serves 2


Ingredients :

Chicken - 4 Thighs (You can use any piece of choice, I had thighs at home)
Pesto Sauce as required
Salt as per taste
Turmeric powder a pinch
Pepper to taste
Oil as required.

Pesto Sauce :

Fresh Basil leaves - 1 cup tightly packed
Chopped Pine nuts - 1/2 cup (You can substitute with walnuts)
Parmesan Cheese - 1 1/4 Tablespoon grated
Garlic - 1 clove
Olive oil - 1/4 cup
Water as required
Lemon juice - 1 Tablespoon
Salt as required
Pepper as required

Method :

1. Wash the basil leaves and add it to the jar of a mixer. Add the pine nuts, Parmesan cheese, Garlic and run the mixer by adding olive oil little by little. To thin it to desired consistency add water.
2. Pesto sauce is ready. To use simply add salt and pepper.
3. Pesto sauce can be frozen to use later. To freeze pesto sauce do not add salt and pepper. Add lemon juice and mix well. Pour in to ice cube tray and freeze. Once frozen transfer to a zip lock bag. You can thaw required amount of cubes to be used when needed.





4. Preheat oven to 180C

5. Wash and clean the chicken. Leave it submerged in cold water with some salt for 30 minutes. This will reduce or eliminate the blood or red liquid that oozes when you cook chicken.
6. Drain the water completely and pat dry the chicken. Make slits with a sharp knife.
7. Add the pesto sauce. Add salt and pepper if not already added to the pesto sauce. Add some turmeric powder. Mix well.
8. You can marinade the chicken for an hour or overnight or even roast immediately.
9. Grease a roasting or baking tray with oil.
10. Arrange the chicken pieces and brush them or spray them with oil.



11. Roast the chicken for 45-75 minutes or till done.




12. Turn the chicken pieces over to roast well on the other side after 35 minutes.
