This recipe is so easy to prepare and tastes great as accompaniment to rice with rasam, sambhar or curd. The vegetables are cooked but still crisp and do not loose crunch.



Here is the recipe..

Serves 2

Ingredients :
Mixed vegetables - 1 cup chopped (frozen or fresh)
Onion - 1/2 chopped
Red chilli powder - 1/2 Teaspoon or to taste
Turmeric powder - 1/8 Teaspoon
Salt as per taste
Coconut - 3 Tablespoons grated
Oil - 2 Teaspoons
Mustard seeds- 1/2 Teaspoon
Urad daal - 1 Teaspoon
Curry leaves - 6-8

Method :
1. Wash the vegetables. If using frozen vegetables heat them slightly in a saucepan with water.
2. In a cooking vessel heat oil. Temper with mustard seeds, urad daal and curry leaves.
3. Add the onion and fry till it turns translucent.
4. Add the vegetables and fry for 2 minutes on medium flame.
5. Add chilli powder, turmeric powder and salt and mix well.
6. Sprinkle some water, cover and cook for 3-4 minutes.
7. Add the grated coconut and mix well. Turn off flame.


Enjoy mix vegetables poriyal.

Note :
You can make it with just one or a combination of 2 vegetables.
