The owner of the recipe for these brownies claims them to be the best ever brownies and oh yes yes and yes and a big fat yes, they absolutely are. My husband who dislikes chocolates eats them and says mmmm yumm.. This is the second time I made these in a week and I think they will continue to be made more often. Eat them as is or warm them up and add a scoop of ice cream and enjoy.

 Here is the recipe..

Makes 8 - 10 brownie squares

Ingredients :
Butter - 60 gms unsalted
Granulated White sugar - 1/2 cup + 1 Tablespoon
Egg - 1 at room temperature
Vanilla extract - 1/4 Teaspoon
Cocoa powder - 1/4 cup + 1 Tablespoon
Salt - 1/8 Teaspoon
Baking powder - 1/4 Teaspoon
All purpose flour - 1/4 cup + 2 Tablespoons
Chocolate chips - 1/2 cup

Method :
Preheat oven to 180C
1. Melt butter till it is bubbly. I melted it in a mixing bowl sitting over a saucepan of simmering water but you can melt it in the microwave too. Do not melt it over direct heat
2. Add sugar to the butter and mix well using a hand whisk or spoon. I used a small egg beating whisk. Do not use any electric beaters or mixers when preparing brownie mix.
3. Add egg and vanilla extract and mix well till it turns smooth.

4. In a separate bowl sieve all purpose flour, cocoa powder, salt and baking powder and mix well.

5. Add it to the butter mixture and mix well. Mixing gets tough now but mix well.

6. Add chocolate chips and mix well.

7. Transfer this mixture to a pan greased with butter or oil. I used my small loaf pan as it is a small batch.

8. Bake for 26-29 minutes.
9. Remove and place on a cooling rack till it comes down to room temperature.

10. Cut pieces of desired size using a serrated knife while it is still warm.
11. Enjoy as is or by frosting. I just drizzled some icing sugar.

12, I keep the brownies in the refrigerator as I like them cold.
