Besan Dahi Baday are deep fried gram flour patties that are soaked in tempered yogurt. A must have for Iftar during the month of Ramadan. An excellent evening snack too.



Here is the recipe..

Serves - 2

Ingredients :

For Baday
Besan (gram flour) - 4 tablespoons
Ginger garlic paste - 1/2 teaspoon
Salt as per taste
Red chilli powder - 1/2 teaspoon or as per taste
Turmeric powder - 1/4 teaspoon
Baking Powder a pinch (Optional)
Water as required
Oil for deep frying

For dahi
Yogurt - 1.5 cups
Ginger garlic paste - 1/4 teaspoon
Salt as per taste
Water as required

For tadka / bagar
Oil - 1 tablespoon
Dried whole red chilli - 2
Cumin seeds - 1/4 teaspoon
Curry leaves - 6-8
Red chilli powder - 1/2 Teaspoon

Method :
1. First prepare the batter for the baday. In a mixing bowl, add the besan followed by all the ingredients except the water and the oil. Mix well.
2. Start adding water little by little. First form a thick paste without any lumps. Then very carefully add water little by little and make it into a batter like pancake batter. Neither too thick nor too thin. Keep this aside for 15 minutes.
3. Next prepare the dahi. In a bowl, add the yogurt. Make sure the yogurt is not sour.
4. Add the ginger garlic paste and salt to it and mix it well with a spoon or a whip.
5. Now add some water to the yogurt to thin it a bit. Do not keep the yogurt too thick or too thin. You want it to nicely coat the baday. It will not taste good if it is too runny.
6. Mix it well. Dahi is ready. You can transfer it to a serving bowl.
7. Take water in a bowl to soak the baday after frying and before dropping them in to dahi.
8. Heat oil is a kadai. Once the oil is hot reduce the heat to medium flame.
9. Mix the baday batter one more time and start pouring it into the oil using a tablespoon. do not overcrowd.
10. Do not worry a lot about maintaining an uniform shape. they will taste just fine.
11. Fry the baday till they are golden in color on both sides. do not make them brown or crispy.
12. Once done, remove the baday from the oil carefully and drop them in to the bowl of water.
13. Add the next batch of batter and start frying.
14. When the second batch is half done, start removing the baday from the water and gently press them with your fingers to squeeze the excess water and drop them into the dahi.
15. Repeat steps till all the baday are fried by dropping them in water once done and then squeezing and dropping them in the dahi.
16. Take a small pan and place it on low flame.
17. Carefully add a tablespoon of the hot frying oil to it.
18. Add the dried red chillies followed by cumin seeds.
19. Add the curry leaves when the cumin seeds start turning brown.
20. Turn off the flame when the curry leaves start changing color.
21. Add the red chilli powder to this and give a quick stir.
22. Drop it all over the dahi spreading evenly.
